You just need patience, a hand whish, and zeal to make these cookies.
Let’s take a look at the ingredients list –
- unsalted butter
- heavy cream
- All-purpose flour
- Kosher salt
- vanilla essence
- Granulated sugar
- brown sugar
- milk chocolate disks
- bittersweet chocolate disks
- baking soda
Browning the Butter
This step is so important that I cannot stress it enough. In a saucepan, add two sticks to the butter. Make sure you use good quality butter in the process. Keep the flame in low heat, or else the Butter could burn, which we don’t want. We want a dark brown color. Turn off the flame when you notice the Butter turning golden brown. That’s the color we want. Even if it’s one or two shades of dark golden brown, then it’s fine. After that’s done, mix it properly, and then you are done.
In the next step, we will be mixing another ingredient which is heavy cream. Mixing heavy cream in the ingredient to get a more emulsified batter. Generally, we don’t get to see heavy cream in any cookie recipe, but Claire Saffitz uses heavy cream in this recipe for the batter to become moist. Let the mixture cool down and settle at room temperature. Though you can use the double boiler method and put cold ice bath water under the mixing bowl and start mixing the batter, and you’ll notice it gets into a nice creamy batter.
In the next step, add equal parts of brown sugar and equal parts of granulated sugar. With brown sugar, the cookies get crispy and chewy, whereas, with white sugar, it gets the perfect amount of sweetness. Whisk the sugar properly and mix it well.
Now it’s time to add eggs to the batter. Add 2 eggs to the batter. Cold eggs can also bring the temperature down, so that’s a plus tip that she gave. Whisk the mixture properly and make sure not to add both eggs together.
In the next step, add vanilla essence and mix it with all the ingredients. Add a tablespoon of good-quality vanilla extract. She highly prioritizes using a good quality extract.
Now it’s time to mix the dry ingredients. Add 2 cups of All purpose flour. Don’t forget to use a separate bowl for the dry ingredients. Add 1 tablespoon of baking soda to it. Here she uses diamond crystal kosher salt. Use 2 teaspoons of kosher salt here. If you are using Morton’s brand, then add 1 teaspoon of kosher salt in that case. Whisk the mixture.
The next step is the chocolate step. She used a disc of chocolates as when it melts; it forms this chocolate sheet texture which primarily looks and tastes good. However, you can also use chocolate chips. She has taken 5 ounces each of bittersweet chocolate discs and milk chocolate. Chop the chocolates finely.
Now add the dry ingredients to the wet ingredients. Whisk it properly and add your chocolates in there. Now mix it properly, and there you go. Your batter is ready. Leave the batter for a while, then start making your cookies.
Now use a scoop and use one scoop for your cookies. Scoop the dough on a baking tray and on the baking sheet. Line it and after you are done keep it in the freezer to rest the dough for a while. Keep it for like 12 hours if you can. If you cannot, then, in that case, keep it for like 3-4 hours maximum. That will do.
After that’s done, it’s time to bake. Preheat the oven to 350° and prepare the oven. Bake them for 18-22 minutes, and then your cookies will be done. Switch racks after 12 minutes. Wait for the cookies to turn golden brown.
There you go! You made these super delicious and easy chocolate chip cookies. You will love these, honestly.
