Ingredients

  • 1 bunch of palak
  • 1 cup of water
  • 2 tbsp oil
  • 1 tsp jeera/cumin powder
  • 2 green chilis
  • 1 finely chopped onion
  • 2 tsp ginger garlic paste
  • ¼ tsp turmeric powder
  • 1 tsp coriander powder
  • One tbsp besan
  • 1 chopped tomato
  • Salt
  • ½ tsp sugar
  • 1 tsp curd
  • ½ tsp garam masala
  • 2 tsp ghee/butter
  • Dried red chilis
  • 1 tsp chopped garlic

Instructions

  • Wash and dry the palak and boil the same for 3 minutes.
  • Transfer the palak to a bowl of cold water. This helps to retain the color. Proceed to transfer half of the palak in a blender to make a puree. Keep the other half chopped in a dish.
  • In a pan, pour 2 tbsp oil and add 1 tsp cumin/jeera powder, 1-2 green chilis, 1 finely chopped onion. Stir and cook the same until soft.
  • Add 2 tsp ginger-garlic paste, ¼ tsp turmeric powder, 1 tsp coriander powder, and mix thoroughly for 1 minute.
  • Add 1 tbsp besan and mix thoroughly on a low flame for 2 minutes to get a uniform texture.
  • Now add the finely chopped tomato and the roughly chopped palak and mix well for a minute.
  • Proceed to add the palak puree into the pan and cook well for 2 minutes.
  • Add salt and sugar according to your taste and give it a mix after adding a little water.
  • Go on to add 1 tsp curd in the pan and mix it well for a creamy texture.
  • Lastly, add ¼ tsp garam masala and mix it.
  • Garnish with chopped garlic and dried chili before serving it.
  • Enjoy!

  • Wash and chop the palak leaves and keep them aside.
  • In a pressure cooker, add 2 tsp ghee, 2 tsp oil, whole spices, and 1 finely chopped onion and sauté it for a minute.
  • Go on to add 2 green chilis, ½ tsp of ginger garlic paste, ¼ tsp turmeric powder, One tsp red chili powder, 1 tsp coriander powder, One-tsp cumin powder, One tsp garam masala powder, and give it a thorough mix for 1 minute.
  • Add the chopped palak leaves and mix it all in. Go on to add 1 tsp of salt.
  • Proceed to add 1 cup basmati rice which was soaked for 15 minutes, and gently mix it.
  • Add 2 cups of water to the cooker.
  • Pressure cook the ingredients for 2 whistles on medium flame.
  • Turn off the stove and let the pulao rest for 15 minutes.

  • Cover the pan and let it cook for 5 minutes.
  • After 5 minutes, give the potatoes a good stir and check if the potatoes are tender.
  • Proceed to add and spread the finely chopped palak evenly into the pan and cover it for 5 minutes.
  • After 5 minutes, stir the sabzi thoroughly.
  • Add salt according to taste. As spinach is high on salt, it is better to add a very little amount of salt into the pan, or else your food will turn out bitter.
  • Go on to add ¼ tsp of red chili powder into the pan and mix it well with the other ingredients.
  • Cook the sabzi covered with the lid for the excess water to evaporate.
  • After 1-2 minutes, you will see that the excess water has evaporated and your food is ready.

  • 1½ cups whole wheat flour

  • 3-4 medium potatoes, boiled and peeled
  • 1-2 green chilis
  • One tsp red chili powder

Instructions:

  • Mix together whole wheat flour, carom seeds, salt, oil, and palak puree.
  • Add water and knead into a soft dough. Cover and set aside for 10–15 minutes.
  • For stuffing, add boiled potatoes, green chilis, salt, red chili powder, and mix well.
  • Fill the dough with the stuffing and seal it.
  • Roll it into a paratha and set it aside.
  • Heat a non-stick Tawa and place a paratha on it. Cook the parathas on both sides with ghee.
  • Serve hot with curd!
